Total Domination Chorizo Potato Tacos

Another recipe from our founding brewer, these savory tacos are perfect for a summer dinner party. Pairs well with Spring Reign Guacamole!

INGREDIENTS

1 lb. yukon or red potatoes, cut into ½ in chunks
12 oz. chorizo sausage, crumbled and casings removed
1 medium onion, finely chopped
2 cloves garlic, minced
3-4 tbsp. olive oil
1 tsp. salt
1/3 cup cilantro chopped for garnish
8 corn tortillas
1/4 cup crumbled Cotija cheese
1 bottle Total Domination IPA

INSTRUCTIONS

Fill large saucepan with water and bring to a boil. Add potatoes and 1 tsp. of salt, cook covered for 10 to 12 minutes, or until tender and easily pierced with a fork. Drain and set aside.

Heat a large, nonstick saucepan over medium heat. Add sausage and cook until it begins to brown. Warm olive oil in another large, nonstick saucepan over medium-high heat. Add potatoes and fry until crispy on the outside but still soft in the middle (about 15-20 minutes). Add onion and minced garlic to the sausage and saute’ until onions are translucent. Deglaze with a splash of Total Domination IPA and cover for 30 seconds. Uncover and allow the liquids to reduce (about 5-7 minutes).

Put tortillas in warm, damp towels and place in oven under low heat to warm. Using 2 tortillas per taco, add chorizo, Cotija cheese, cilantro and a dollop of guacamole. Makes 4, large tacos.
